- Dijon mustard

- Swiss cheese, shredded

- Pastrami, thinly sliced
- 8 ounces
Instructions
- Begin by spreading a thin layer of Dijon mustard evenly on one side of each tortilla.
- Next, evenly distribute the pastrami, Swiss cheese, and sliced pickles on half of each mustard-spread tortilla. Fold the tortilla in half, covering the fillings to form a half-moon shape.
- Heat unsalted butter in a large skillet over medium heat until it melts and starts to bubble.
- Place the prepared quesadillas into the hot skillet, making sure not to overcrowd them. Cook for 2-3 minutes on each side or until the tortillas turn a golden brown and the cheese has completely melted.
- Remove the quesadillas from the skillet and let them rest for a few minutes. This will make cutting them into wedges easier and keep the melted cheese from oozing out.
