Pickles, sliced
1/2 cup
Dijon mustard
2 tablespoons
Butter, unsalted

Flour tortillas
4 (8-inch)
Swiss cheese, shredded

Pastrami, thinly sliced

Instructions

  1. Begin by spreading a thin layer of Dijon mustard evenly on one side of each tortilla.
  2. Next, evenly distribute the pastrami, Swiss cheese, and sliced pickles on half of each mustard-spread tortilla. Fold the tortilla in half, covering the fillings to form a half-moon shape.
  3. Heat unsalted butter in a large skillet over medium heat until it melts and starts to bubble.
  4. Place the prepared quesadillas into the hot skillet, making sure not to overcrowd them. Cook for 2-3 minutes on each side or until the tortillas turn a golden brown and the cheese has completely melted.
  5. Remove the quesadillas from the skillet and let them rest for a few minutes. This will make cutting them into wedges easier and keep the melted cheese from oozing out.
