Olive oil
2 tablespoons
Pastrami
8 ounces, diced
Potatoes
4 medium, peeled and diced
Onions
1 medium, diced
Garlic
2 cloves, minced
Salt
to taste
Black pepper
to taste
Fresh parsley
1/4 cup, chopped (for garnish)

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the diced pastrami to the skillet and cook until it starts to brown and crisp up, about 5 minutes.
  3. Stir in the diced potatoes and onions. Cook, stirring occasionally, until the potatoes are golden brown and crispy on the outside, about 15 minutes.
  4. Add the minced garlic, salt, and black pepper to the skillet, mixing well. Cook for an additional 2 minutes until the garlic is fragrant.
  5. Remove from heat and serve the hash hot, garnished with fresh parsley.
