  • Ramen noodles (4 servings)
  • Pastrami (8 ounces, thinly sliced)
  • Green onions (1/2 cup, chopped)
  • Eggs (4)
  • Sriracha (to taste)

Instructions

  1. In a large pot, combine the chicken broth, soy sauce, sesame oil, minced garlic, and minced ginger. Bring to a boil over medium-high heat.
  2. Once boiling, reduce the heat to low and let the broth simmer for about 10 minutes to develop the flavors. Taste and adjust seasoning if needed.
  3. While the broth is simmering, bring a separate pot of water to a boil. Carefully add the eggs and cook for 6-7 minutes for a soft-boiled texture. Remove the eggs, place them in an ice bath to stop cooking, then peel and set aside.
  4. In another pot, cook the ramen noodles according to the package instructions. Drain well and divide the noodles among four bowls.
  5. Top each bowl of noodles with equal amounts of sliced pastrami, chopped green onions, and a soft-boiled egg cut in half.
  6. Ladle the hot broth over the noodles and toppings, ensuring everything is well covered.
