- 12 Spring roll wrappers
- 12 slices Pastrami, thinly sliced
- 12 slices Swiss cheese, thinly sliced

- 1 teaspoon (for Thousand Island dressing) White vinegar
- 1/2 teaspoon (for Thousand Island dressing) Sugar
- 1/4 teaspoon (for Thousand Island dressing) Salt

Instructions
- To make the Thousand Island dressing, combine the mayonnaise, ketchup, pickle relish, onion, vinegar, sugar, and salt in a bowl. Mix until well blended and set aside.
- Lay out a spring roll wrapper on a clean surface. Place a slice of pastrami, a slice of Swiss cheese, and a spoonful of sauerkraut in the center.
- Fold the bottom corner of the wrapper over the filling, then fold in the sides and roll the wrapper tightly.
- Repeat steps 2 and 3 with the remaining wrappers and filling.
- Heat the vegetable oil in a deep fryer or large pot to 375°F.
- Fry the spring rolls in batches until golden brown, about 3-4 minutes.
- Drain the spring rolls on paper towels to remove excess oil.
- Serve the spring rolls hot, with the homemade Thousand Island dressing for dipping.
