Ingredients

Salt

Mayonnaise
1/2 cup
Mustard
1/4 cup
Diced Pickles
1 cup
Shredded Cheddar Cheese
2 cups
Pastrami
2 cups, chopped
Tortilla Chips
1 large bag (about 13 oz)

Instructions

  1. Preheat the oven to 350°F (180°C).
  2. Spread out the tortilla chips evenly in a single layer on a large baking sheet. Avoid overlapping for even cooking.
  3. Evenly distribute the chopped pastrami over the tortilla chips.
  4. Sprinkle the shredded cheddar cheese over the pastrami layered chips ensuring a generous coating.
  5. Bake the prepared chips for about 10 minutes, or until the cheese is melted and bubbly.
  6. While the nachos are baking, prepare the sauce. In a small bowl, combine 1/2 cup mayonnaise and 1/4 cup mustard. Stir until well mixed.
  7. Once the nachos are out of the oven, scatter the diced pickles across the top.
  8. Drizzle the prepared mustard-mayo sauce evenly over the nachos.
  9. Season with salt and freshly ground black pepper to taste.
  10. Serve the Pastrami Loaded Nachos immediately while still warm and enjoy the cheesy, meaty goodness.
