Instructions
- Preheat the oven to 350°F (180°C).
- Spread out the tortilla chips evenly in a single layer on a large baking sheet. Avoid overlapping for even cooking.
- Evenly distribute the chopped pastrami over the tortilla chips.
- Sprinkle the shredded cheddar cheese over the pastrami layered chips ensuring a generous coating.
- Bake the prepared chips for about 10 minutes, or until the cheese is melted and bubbly.
- While the nachos are baking, prepare the sauce. In a small bowl, combine 1/2 cup mayonnaise and 1/4 cup mustard. Stir until well mixed.
- Once the nachos are out of the oven, scatter the diced pickles across the top.
- Drizzle the prepared mustard-mayo sauce evenly over the nachos.
- Season with salt and freshly ground black pepper to taste.
