Ingredients
- All-purpose flour (2 cups)
- Cold unsalted butter (1/2 cup, cubed)
- Large egg (1)
- Cold water (3-4 tablespoons)
- Ground beef (1 pound)
- Mushrooms (1 cup, finely chopped)
- Onion (1 medium, finely chopped)
- Garlic (2 cloves, minced)
- Salt (to taste)
- Black pepper (to taste)
- Egg yolk (1 (for egg wash))
Instructions
- In a large bowl, combine the flour and cold, cubed butter. Use your fingers or a pastry cutter to cut the butter into the flour until the mixture resembles coarse crumbs.
- Add the egg and cold water to the flour mixture. Mix until the dough comes together. If the dough is too dry, add a little more water, 1 tablespoon at a time.
- Turn the dough out onto a lightly floured surface and knead it for a few minutes until it becomes smooth and elastic. Wrap the dough in plastic wrap and refrigerate for 30 minutes.
- In a skillet over medium heat, cook the ground beef, mushrooms, onion, and garlic until the meat is browned and the vegetables are tender, about 7-10 minutes. Season with salt and pepper to taste. Remove from heat and let the filling cool.
- Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
- Roll out the chilled dough on a lightly floured surface to a thickness of about 1/8 inch. Cut out circles or squares, approximately 3 inches in diameter.
- Place a spoonful of the meat and mushroom filling in the center of each dough piece. Fold the dough over the filling to form a triangle or rectangle shape. Press the edges together to seal.
- Place the paszteciki on the prepared baking sheet. Brush the tops with beaten egg yolk for a shiny finish.
- Bake for 20-25 minutes, or until the paszteciki are golden brown and crispy.
