Patacones (Tostones)
Patacones, also known as tostones, are a delightful and crispy Latin American treat made from twice-fried green plantains. This dish is a staple in various countries, particularly in Colombia, Venezuela, and the Dominican Republic. The crunchiness of the patacones combined with the subtle flavors of garlic and salt make them the perfect accompaniment to any meal or a fantastic appetizer to share with friends. Ingredients
- Green plantains
- 2 large
- Vegetable oil
- for frying (about 2 cups)
- Garlic powder
- 1 teaspoon
- Salt

- Lime wedges

Instructions
- Peel the green plantains by cutting off the ends and making lengthwise slits in the skin. Remove the skin carefully.
- Cut the plantains into 1-inch thick slices.
- In a large skillet, heat the vegetable oil over medium heat until hot but not smoking.
- Fry the plantain slices in the hot oil until golden brown, about 2-3 minutes per side. Work in batches if necessary.
- Remove the fried plantains from the skillet and place them on a paper towel-lined plate to drain excess oil.
- Using a tostonera (a specific tool for this purpose) or the bottom of a glass, flatten each plantain slice to about 1/4 inch thickness.
- Return the flattened plantains to the skillet and fry again until crispy and golden brown, about 2 minutes per side.
- Remove the patacones from the skillet and place them on a paper towel-lined plate to drain excess oil once more.
- Sprinkle the patacones with salt and garlic powder to taste. Serve hot with lime wedges and enjoy!

- For added flavor, consider marinating the sliced plantains in lime juice and garlic before frying.
- Experiment with toppings such as guacamole, pico de gallo, or shredded cheese to elevate your patacones.
- If you want a spicier kick, sprinkle some cayenne pepper or add a dash of hot sauce.
