Ingredients

Original recipe serves 4

Potatoes
2 pounds, peeled and cut into bite-sized cubes
Olive oil
3 tablespoons
Salt
1 teaspoon, or to taste
Paprika
1 teaspoon
Garlic powder
1/2 teaspoon
Tomato sauce
1/2 cup
Hot sauce
2 tablespoons, or to taste
Mayonnaise
1/2 cup
Garlic
2 cloves, minced
Fresh parsley
2 tablespoons, chopped (for garnish)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Place the cubed potatoes in a large pot of salted boiling water. Cook until tender, about 10 minutes. Drain and let cool slightly.
  3. In a large bowl, combine the olive oil, salt, paprika, and garlic powder. Mix well.
  4. Add the drained potatoes to the bowl and toss until they are evenly coated with the oil and spices.
  5. Spread the potatoes out on a baking sheet in a single layer. Bake for 20-25 minutes, or until the potatoes are crispy and golden brown, flipping halfway through for even cooking.
  6. While the potatoes are baking, prepare the spicy tomato sauce by mixing the tomato sauce and hot sauce in a small bowl. Adjust the amount of hot sauce to your desired level of spiciness.
  7. In another small bowl, combine the mayonnaise and minced garlic to create the garlic aioli. Stir well until smooth.
  8. Once the potatoes are done, transfer them to a serving dish and drizzle generously with the spicy tomato sauce.
  9. Garnish with the chopped parsley and serve immediately with the garlic aioli on the side.
