Ingredients
- Potatoes
- 2 pounds, peeled and cut into bite-sized cubes
- Olive oil
- 3 tablespoons
- Salt
- 1 teaspoon, or to taste
- Paprika
- 1 teaspoon
- Garlic powder
- 1/2 teaspoon
- Tomato sauce
- 1/2 cup
- Hot sauce
- 2 tablespoons, or to taste
- Mayonnaise
- 1/2 cup
- Garlic
- 2 cloves, minced
- Fresh parsley
- 2 tablespoons, chopped (for garnish)
Instructions
- Preheat the oven to 425°F (220°C).
- Place the cubed potatoes in a large pot of salted boiling water. Cook until tender, about 10 minutes. Drain and let cool slightly.
- In a large bowl, combine the olive oil, salt, paprika, and garlic powder. Mix well.
- Add the drained potatoes to the bowl and toss until they are evenly coated with the oil and spices.
- Spread the potatoes out on a baking sheet in a single layer. Bake for 20-25 minutes, or until the potatoes are crispy and golden brown, flipping halfway through for even cooking.
- While the potatoes are baking, prepare the spicy tomato sauce by mixing the tomato sauce and hot sauce in a small bowl. Adjust the amount of hot sauce to your desired level of spiciness.
- In another small bowl, combine the mayonnaise and minced garlic to create the garlic aioli. Stir well until smooth.
- Once the potatoes are done, transfer them to a serving dish and drizzle generously with the spicy tomato sauce.
- Garnish with the chopped parsley and serve immediately with the garlic aioli on the side.
