Ingredients

Skewers
8-10, soaked in water if wooden
Salt

Pepper

Fresh mint leaves
1/4 cup, chopped
Lemon juice

Olive oil

Red onion

Cherry tomatoes
1 cup, halved
Halloumi cheese
8 ounces, cut into 1-inch cubes
Frozen peas

Instructions

  2. In a pot of boiling water, cook the frozen peas for 2-3 minutes until tender. Drain and set aside.
  3. On each skewer, thread a piece of halloumi cheese, followed by cherry tomato halves, red onion chunks, and cooked peas. Repeat until the skewer is filled, leaving a little space at the ends for easy handling.
  4. In a small bowl, whisk together the olive oil, lemon juice, chopped mint leaves, salt, and pepper to create a refreshing mint vinaigrette.
  5. Brush the skewers generously with the mint vinaigrette, ensuring all sides are well-coated.
