- Skewers
- 8-10, soaked in water if wooden
- Salt

- Fresh mint leaves
- 1/4 cup, chopped
- Lemon juice
- 2 tablespoons
- Olive oil
- 3 tablespoons
- Red onion
- 1, cut into chunks
- Cherry tomatoes
- 1 cup, halved
- Halloumi cheese
- 8 ounces, cut into 1-inch cubes
- Frozen peas
- 1 cup
Instructions
- Preheat the grill or barbecue to medium-high heat.
- In a pot of boiling water, cook the frozen peas for 2-3 minutes until tender. Drain and set aside.
- On each skewer, thread a piece of halloumi cheese, followed by cherry tomato halves, red onion chunks, and cooked peas. Repeat until the skewer is filled, leaving a little space at the ends for easy handling.
- In a small bowl, whisk together the olive oil, lemon juice, chopped mint leaves, salt, and pepper to create a refreshing mint vinaigrette.
- Brush the skewers generously with the mint vinaigrette, ensuring all sides are well-coated.
- Place the skewers on the grill and cook for 2-3 minutes per side, or until the halloumi cheese is golden and slightly charred.
