- Frozen peas
- 1 cup, thawed
- Ripe mango
- 1, diced
- Red bell pepper
- 1, diced
- Red onion
- 1/4 cup, finely chopped
- Fresh cilantro
- 1/4 cup, chopped
- Lime juice
- 2 tablespoons, freshly squeezed
- Salt
- 1/2 teaspoon, or to taste
- Black pepper
- 1/4 teaspoon, or to taste
- Cayenne pepper
- 1/4 teaspoon, or to taste
Instructions
- In a large bowl, combine the thawed peas, diced mango, diced red bell pepper, finely chopped red onion, and chopped cilantro. Mix well to incorporate all the ingredients.
- In a separate small bowl, whisk together the lime juice, salt, black pepper, and cayenne pepper until well combined.
- Pour the lime juice mixture over the pea and mango mixture and toss gently to ensure everything is evenly coated.
