Pea and Mango Salsa

Brighten your summer gatherings with this delightful Pea and Mango Salsa! The sweetness of ripe mangoes pairs beautifully with the vibrant crunch of green peas, creating a refreshing and colorful dish that's bursting with flavor. This salsa is not only a feast for the eyes but also a perfect accompaniment to grilled meats, fish, or as a standalone appetizer with tortilla chips. Its origins can be traced back to the tropical regions of Central America, where fresh ingredients and bold flavors are celebrated in everyday cooking.

Serves 4

Ingredients

Frozen peas
1 cup, thawed
Ripe mango
1, diced
Red bell pepper
1, diced
Red onion
1/4 cup, finely chopped
Fresh cilantro
1/4 cup, chopped
Lime juice
2 tablespoons, freshly squeezed
Salt
1/2 teaspoon, or to taste
Black pepper
1/4 teaspoon, or to taste
Cayenne pepper
1/4 teaspoon, or to taste

Instructions

  1. In a large bowl, combine the thawed peas, diced mango, diced red bell pepper, finely chopped red onion, and chopped cilantro. Mix well to incorporate all the ingredients.
  2. In a separate small bowl, whisk together the lime juice, salt, black pepper, and cayenne pepper until well combined.
  3. Pour the lime juice mixture over the pea and mango mixture and toss gently to ensure everything is evenly coated.
  4. Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld together beautifully.
  5. Serve chilled as a refreshing appetizer, or use it as a vibrant topping for grilled fish or chicken. Enjoy!

Tips

  • 💡 For an extra kick, consider adding diced jalapeño or a splash of hot sauce.
  • 💡 You can substitute fresh peas for frozen peas if they are in season, just blanch them briefly before use.
  • 💡 This salsa can be made a day in advance for an even more intense flavor.
