- Fresh cilantro (chopped)
- 1/4 cup
- Garlic (minced)
- 2 cloves
- Onion (finely chopped)
- 1 small
- Frozen peas (thawed)
- 1 cup
- Potatoes (grated or mashed, boiled)
- 2 medium
Instructions
- In a large mixing bowl, combine the grated or mashed boiled potatoes, thawed peas, chopped onion, minced garlic, chopped cilantro, chickpea flour, cumin, coriander, salt, and black pepper. Mix until well combined and a dough-like consistency forms.
- Heat approximately 1/4 inch of vegetable oil in a frying pan over medium heat until hot but not smoking.
- Take about 1/4 cup of the mixture, shape it into a patty, and flatten it gently. Repeat this process with the remaining mixture to form fritters.
- Carefully place the patties in the hot oil, ensuring not to overcrowd the pan. Cook for about 3-4 minutes on each side, or until they are golden brown and crispy.
- Once cooked, remove the fritters from the pan and place them on a paper towel-lined plate to drain any excess oil.
