
Pea and Potato Salad
This refreshing pea and potato salad is perfect for summer picnics and barbecues.
Ingredients
- Salt and pepper (to taste)
- Lemon juice (1 tablespoon)
- Dijon mustard (1 tablespoon)
- Mayonnaise (1/2 cup)
- Fresh dill (2 tablespoons, chopped)
- Red onion (1/4 cup, finely chopped)
- Frozen peas (1 cup, thawed)
- Potatoes (1.5 pounds, boiled and cubed)
Instructions
- In a large bowl, combine the boiled and cubed potatoes, thawed peas, chopped red onion, and fresh dill.
- In a separate small bowl, whisk together the mayonnaise, Dijon mustard, lemon juice, salt, and pepper.
- Pour the dressing over the potato mixture and gently toss until well coated.
- Cover and refrigerate for at least 1 hour to allow the flavors to meld together.
