Pea and Potato Salad

This refreshing pea and potato salad is perfect for summer picnics and barbecues.

Ingredients

  • Salt and pepper (to taste)
  • Lemon juice (1 tablespoon)
  • Dijon mustard (1 tablespoon)
  • Mayonnaise (1/2 cup)
  • Fresh dill (2 tablespoons, chopped)
  • Red onion (1/4 cup, finely chopped)
  • Frozen peas (1 cup, thawed)
  • Potatoes (1.5 pounds, boiled and cubed)

Instructions

  1. In a large bowl, combine the boiled and cubed potatoes, thawed peas, chopped red onion, and fresh dill.
  2. In a separate small bowl, whisk together the mayonnaise, Dijon mustard, lemon juice, salt, and pepper.
  3. Pour the dressing over the potato mixture and gently toss until well coated.
  4. Cover and refrigerate for at least 1 hour to allow the flavors to meld together.
  5. Serve chilled and enjoy!
