Servings: 6

Ingredients

  • Salt (1 teaspoon, more to taste)
  • Black pepper (1/2 teaspoon, more to taste)
  • Lemon juice (2 tablespoons)
  • Dijon mustard (1 tablespoon)
  • Mayonnaise (1/2 cup)
  • Fresh dill (2 tablespoons, finely chopped)
  • Red onion (1 medium, finely chopped)
  • Frozen peas (2 cups, thawed)
  • Potatoes (4 large, boiled and cubed)

Instructions

  1. In a large bowl, combine the boiled and cubed potatoes, thawed peas, finely chopped red onion, and fresh dill. Mix gently to evenly distribute the ingredients.
  2. In a small bowl, whisk together the mayonnaise, Dijon mustard, lemon juice, salt, and black pepper to create the dressing. Adjust the seasoning to taste.
  3. Slowly pour the dressing over the potato and pea mixture. Toss gently until all the ingredients are well coated with the dressing.
  4. Cover the salad and refrigerate for at least 1 hour. This allows the flavors to meld together, enhancing the overall taste of the salad.
  5. Serve the salad chilled. Enjoy as a side dish or as a light, refreshing meal.
