Ingredients

Salt

Black pepper
1/4 teaspoon, or to taste
Extra virgin olive oil
3 tablespoons
Freshly squeezed lemon juice
2 tablespoons
Fresh mint leaves
1/4 cup, finely chopped
Red onion
1/2 cup, finely chopped
Radishes
1 cup, thinly sliced
Fresh or frozen peas
2 cups

Instructions

  1. If using fresh peas, blanch them in boiling water for 2 minutes, then immediately transfer them to an ice bath to stop the cooking process and retain their vibrant color. If using frozen peas, cook them according to package instructions and allow them to cool.
  2. In a large salad bowl, combine the cooled peas, thinly sliced radishes, finely chopped red onion, and mint.
  3. To prepare the dressing, in a small bowl, whisk together the freshly squeezed lemon juice, extra virgin olive oil, salt, and pepper until well combined.
  4. Drizzle the dressing over the salad and gently toss to ensure all the ingredients are evenly coated.
  5. For the best flavor, allow the salad to chill in the refrigerator for at least 30 minutes before serving. This allows the flavors to meld together beautifully.
