Pea and Ricotta Crostini with Fresh Mint

Ingredients

- Fresh mint leaves
- 1/4 cup, plus extra for garnish
- Lemon zest
- 1 tablespoon
- Ricotta cheese
- 1 cup
- Fresh peas
- 2 cups
- Baguette
- 1, sliced into 1/2-inch thick slices
Instructions
- Preheat the oven to 350°F (175°C).
- Arrange the baguette slices on a baking sheet and lightly brush each slice with olive oil.
- Bake for 8-10 minutes, or until the slices are golden brown and crispy.
- While the baguette slices are baking, bring a small saucepan of water to a boil. Add the peas and cook for 2-3 minutes, until they are tender.
- Drain the peas and transfer them to a mixing bowl. Using a fork or food processor, mash the peas until smooth.
- To the mashed peas, add the ricotta cheese, lemon zest, chopped mint leaves, salt, and pepper. Stir until well combined.
- Once the baguette slices are ready, allow them to cool slightly. Then, spread each slice with a generous amount of the pea and ricotta mixture.
- Garnish each crostini with a mint leaf for an elegant touch.
- Serve the crostini immediately for the best taste and texture.
