Fresh mint leaves
1/4 cup, plus extra for garnish
Lemon zest
1 tablespoon
Ricotta cheese
1 cup
Fresh peas
2 cups
Baguette
1, sliced into 1/2-inch thick slices

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Arrange the baguette slices on a baking sheet and lightly brush each slice with olive oil.
  3. Bake for 8-10 minutes, or until the slices are golden brown and crispy.
  4. While the baguette slices are baking, bring a small saucepan of water to a boil. Add the peas and cook for 2-3 minutes, until they are tender.
  5. Drain the peas and transfer them to a mixing bowl. Using a fork or food processor, mash the peas until smooth.
  6. To the mashed peas, add the ricotta cheese, lemon zest, chopped mint leaves, salt, and pepper. Stir until well combined.
  7. Once the baguette slices are ready, allow them to cool slightly. Then, spread each slice with a generous amount of the pea and ricotta mixture.
  8. Garnish each crostini with a mint leaf for an elegant touch.
  9. Serve the crostini immediately for the best taste and texture.
