Ingredients

Unsalted butter
2 tablespoons
Onion
1 medium, diced
Garlic
2 cloves, minced
Potatoes
2 medium, peeled and diced
Frozen sweet corn
2 cups
Frozen peas
2 cups
Vegetable broth
4 cups
Milk
1 cup
Salt
to taste
Black pepper
to taste
Fresh parsley
for garnish

Instructions

  1. In a large pot, melt the butter over medium heat.
  2. Add the diced onion and minced garlic. Sauté until the onion becomes translucent, approximately 5 minutes.
  3. Stir in the diced potatoes, frozen peas, and frozen sweet corn, mixing well to combine all ingredients.
  4. Pour in the vegetable broth and increase the heat to bring the mixture to a boil. Once boiling, reduce the heat and let it simmer for 15-20 minutes, or until the potatoes are tender.
  5. Using an immersion blender, blend about half of the soup until smooth to create a creamy texture while leaving some chunks for heartiness. If using a regular blender, be cautious and blend in batches.
  6. Return the blended portion back to the pot and stir in the milk. Season with salt and pepper to taste, adjusting to your preference.
  7. Allow the chowder to simmer for an additional 5 minutes to heat through.
  8. Serve hot, garnished with fresh parsley for a burst of color and flavor.
