Peach and Apricot Cobbler

- 1 cup, divided
- Cornstarch

- Lemon juice

- 1 teaspoon
- All-purpose flour
- 1 cup
- Baking powder
- 2 teaspoons
- Salt
- 1/4 teaspoon
- Unsalted butter
- 1/2 cup, cold and cubed
- Milk
- 1/2 cup
Instructions
- Preheat the oven to 375°F (190°C).
- In a large bowl, combine the sliced peaches, sliced apricots, 3/4 cup of granulated sugar, cornstarch, lemon juice, and cinnamon. Mix well to ensure the fruit is evenly coated.
- Transfer the fruit mixture to a greased 9x9-inch baking dish, spreading it evenly.
- In another bowl, whisk together the all-purpose flour, remaining 1/4 cup of granulated sugar, baking powder, and salt.
- Add the cold, cubed butter to the flour mixture. Using a pastry cutter or your fingers, cut the butter into the flour until it resembles coarse crumbs.
- Pour in the milk and stir gently until just combined; be careful not to overmix.
- Drop spoonfuls of the cobbler dough evenly over the fruit mixture in the baking dish, covering the fruit as much as possible.
- Bake for 35-40 minutes, or until the cobbler topping is golden brown and the fruit is bubbling around the edges.
- Remove from the oven and allow to cool for a few minutes before serving warm.
