Ingredients

Original recipe serves 4

Peaches
4, peeled and diced
Apricots
4, pitted and diced
Sugar
1/2 cup, or to taste
Lemon juice
2 tablespoons, freshly squeezed
Vanilla extract
1 teaspoon
Water
1/2 cup

Instructions

  1. In a medium saucepan, combine the diced peaches, apricots, sugar, lemon juice, vanilla extract, and water.
  2. Bring the mixture to a boil over medium heat, stirring occasionally to dissolve the sugar.
  3. Once boiling, reduce the heat to low and let the compote simmer for 15-20 minutes, or until the fruits are tender and the liquid has thickened slightly.
  4. Remove from heat and allow the compote to cool for about 10 minutes. It will continue to thicken as it cools.
  5. Serve the compote warm or chilled. It pairs wonderfully with yogurt, pancakes, waffles, or as a topping for ice cream.
