- Lemon juice (1/4 cup, freshly squeezed)
- Granulated sugar (4 cups)
- Apricots (2 cups, chopped and pitted)
- Peaches (2 cups, chopped and pitted)
Instructions
- In a large, heavy-bottomed pot, combine the chopped peaches, chopped apricots, granulated sugar, and freshly squeezed lemon juice. Stir well to ensure all fruits are well coated with sugar.
- Place the pot over medium heat and cook, stirring occasionally, until the fruits soften and the sugar has fully dissolved, approximately 15 minutes.
- Once the mixture is bubbling, add the pectin to the pot. Stir continuously for another 10-15 minutes, or until the jam thickens to your desired consistency. To test, drop a spoonful on a cold plate and see if it holds its shape.
- Remove the pot from heat and allow the jam to cool for about 5 minutes. Skim off any foam that may have formed on top.
- Carefully transfer the jam to sterilized jars, leaving about 1/4 inch of headspace at the top. Seal the jars tightly.
- Let the jam cool completely at room temperature before storing in the refrigerator. If processed and sealed properly, this jam can be stored for up to a year.
