Peach and Apricot Popsicles

Ingredients

Water
1 cup
Lemon juice
2 tablespoons, freshly squeezed
Honey
3 tablespoons (adjust to taste)
Apricots
4, pitted and chopped
Peaches
4, pitted and chopped

Instructions

  1. In a blender, combine the chopped peaches, chopped apricots, honey, lemon juice, and water.
  2. Blend the mixture on high speed until smooth and well combined, ensuring there are no chunks of fruit left.
  3. Taste the mixture and adjust the sweetness by adding more honey if desired.
  4. Pour the blended fruit mixture into popsicle molds, filling each mold nearly to the top.
  5. Insert popsicle sticks into the molds, ensuring they are centered and upright.
  6. Place the molds in the freezer and freeze for at least 4 hours, or until completely frozen.
  7. To remove the popsicles from the molds, run warm water over the outside of the molds for a few seconds, then gently pull the popsicles out.
