Peach and Apricot Salsa

This refreshing salsa combines the sweetness of peaches and apricots with a hint of spice.

Ingredients

  • Black pepper (1/4 teaspoon)
  • Salt (1/2 teaspoon)
  • Lime juice (2 tablespoons)
  • Cilantro (1/4 cup, chopped)
  • Jalapeno (1, seeded and finely chopped)
  • Red onion (1/4 cup, finely chopped)
  • Apricots (2, diced)
  • Peaches (2, diced)

Instructions

  1. In a bowl, combine the diced peaches, diced apricots, finely chopped red onion, finely chopped jalapeno, and chopped cilantro.
  2. Add the lime juice, salt, and black pepper. Mix well to combine.
  3. Taste and adjust the seasoning if needed.
  4. Refrigerate for at least 30 minutes to allow the flavors to meld together.
