Servings: 8
Ingredients
- Peaches (4 cups, sliced)
- Blackberries (2 cups)
- Granulated sugar (3/4 cup, divided)
- All-purpose flour (1 1/2 cups)
- Baking powder (2 teaspoons)
- Salt (1/4 teaspoon)
- Unsalted butter (1/2 cup, melted)
- Milk (1 cup)
- Vanilla extract (1 teaspoon)
- Brown sugar (1/4 cup)
- Cinnamon (1 teaspoon)
Instructions
- Preheat the oven to 375°F (190°C).
- In a large bowl, combine the sliced peaches, blackberries, and 1/2 cup of granulated sugar. Toss gently to coat the fruit in sugar. Let it sit for 10 minutes to allow the juices to release.
- In a separate bowl, whisk together the flour, baking powder, salt, and remaining 1/4 cup of granulated sugar until well combined.
- Add the melted butter, milk, and vanilla extract to the dry ingredients. Stir until just combined; do not overmix.
- Pour the fruit mixture into a greased 9x13-inch baking dish, spreading it evenly across the bottom.
- Drop spoonfuls of the cobbler batter evenly over the fruit, leaving some gaps for the fruit to peek through.
- In a small bowl, mix together the brown sugar and cinnamon. Sprinkle this mixture generously over the cobbler batter for added sweetness and warmth.
- Bake for 35-40 minutes, or until the cobbler topping is golden brown and the fruit is bubbling around the edges.
- Remove from the oven and let it cool for a few minutes before serving. This will help the juices settle and make it easier to serve.
- Serve warm with a scoop of vanilla ice cream for an extra indulgent treat.
