Summer Berry and Peach Compote

Ingredients
- Water
- 2 tablespoons
- Cornstarch
- 1 tablespoon
- Cinnamon
- 1/2 teaspoon
- Vanilla extract
- 1 teaspoon
- Lemon juice
- 1 tablespoon
- Sugar
- 1/4 cup
- Blackberries
- 1 cup
- Blueberries
- 1 cup
- Peaches
- 1 cup, pitted and chopped
- Raspberries
- 1 cup
Instructions
- In a medium-sized saucepan, combine the peaches, blueberries, blackberries, raspberries, sugar, lemon juice, vanilla extract, and cinnamon.
- Set the saucepan over medium heat and allow it to cook for about 5 minutes, or until the fruit begins to release its juices.
- While the fruit is cooking, whisk together the cornstarch and water in a small bowl until smooth. This will create a slurry that will thicken your compote.
- Pour the cornstarch slurry into the saucepan, stirring well to integrate it with the fruit mixture.
- Continue to cook the compote for another 5 minutes, or until it reaches your desired thickness.
- Remove the compote from the heat and let it cool slightly before serving.
