Ingredients

Water
2 tablespoons
Cornstarch
1 tablespoon
Cinnamon
1/2 teaspoon
Vanilla extract
1 teaspoon
Lemon juice
1 tablespoon
Sugar
1/4 cup
Blackberries
1 cup
Blueberries
1 cup
Peaches
1 cup, pitted and chopped
Raspberries
1 cup

Instructions

  1. In a medium-sized saucepan, combine the peaches, blueberries, blackberries, raspberries, sugar, lemon juice, vanilla extract, and cinnamon.
  2. Set the saucepan over medium heat and allow it to cook for about 5 minutes, or until the fruit begins to release its juices.
  3. While the fruit is cooking, whisk together the cornstarch and water in a small bowl until smooth. This will create a slurry that will thicken your compote.
  4. Pour the cornstarch slurry into the saucepan, stirring well to integrate it with the fruit mixture.
  5. Continue to cook the compote for another 5 minutes, or until it reaches your desired thickness.
