Instructions
- In a medium-sized saucepan, combine the peaches, blueberries, blackberries, raspberries, sugar, lemon juice, vanilla extract, and cinnamon.
- Set the saucepan over medium heat and allow it to cook for about 5 minutes, or until the fruit begins to release its juices.
- While the fruit is cooking, whisk together the cornstarch and water in a small bowl until smooth. This will create a slurry that will thicken your compote.
- Pour the cornstarch slurry into the saucepan, stirring well to integrate it with the fruit mixture.
- Continue to cook the compote for another 5 minutes, or until it reaches your desired thickness.
- Remove the compote from the heat and let it cool slightly before serving.
- The Summer Berry and Peach Compote can be served warm or chilled, making it a versatile addition to your meals. Spoon it over pancakes, waffles, or yogurt for a burst of summer in every bite.
Tips
- For a different flavor profile, you can swap out the cinnamon for other spices like nutmeg or cardamom.
- If you prefer a smoother texture, you can puree the compote in a blender or with an immersion blender and then strain it.
- The compote can be stored in an airtight container in the refrigerator for up to one week.
