Servings: 4

Ingredients

  • Bread slices (8 slices (thick-cut, such as brioche or challah))
  • Eggs (4 large)
  • Milk (1 cup (whole or your preferred milk))
  • Vanilla extract (1 teaspoon)
  • Cinnamon (1 teaspoon)
  • Fresh peaches (2, pitted and sliced)
  • Fresh blueberries (1 cup)
  • Maple syrup (1/4 cup (for serving))
  • Powdered sugar (for dusting)
  • Butter or cooking spray (for greasing the skillet)

Instructions

  1. In a shallow bowl, whisk together the eggs, milk, vanilla extract, and cinnamon until well combined and frothy.
  2. Preheat a non-stick skillet or griddle over medium heat and lightly grease it with butter or cooking spray.
  3. Dip each slice of bread into the egg mixture, allowing it to soak for about 10 seconds on each side to absorb the flavors without becoming too soggy.
  4. Carefully place the soaked bread slices onto the heated skillet. Cook for 2-3 minutes on each side or until golden brown and crispy.
  5. Once cooked, remove the French toast from the skillet and keep warm on a plate or in a warm oven.
  6. In the same skillet, add the sliced peaches and blueberries. Cook them for 2-3 minutes, or until the fruits are slightly softened and fragrant.
  7. Drizzle the maple syrup over the cooked fruits and stir gently to combine, allowing the fruits to soak up the syrup.
  8. On each plate, layer a few slices of French toast and generously top with the warm peach and blueberry mixture.
  9. Dust with powdered sugar just before serving and enjoy the delightful harmony of flavors.
