Ingredients

Pectin
1 packet (approximately 1.75 oz)
Lemon juice
1/4 cup, freshly squeezed
Sugar
3 cups
Blueberries
2 cups, fresh or frozen
Peaches
4 cups, peeled and diced

Instructions

  1. In a large, heavy-bottomed pot, combine the diced peaches, blueberries, sugar, and fresh lemon juice. The lemon juice not only adds flavor but also helps to extract the natural pectin from the fruits.
  2. Cook the mixture over medium heat, stirring occasionally with a wooden spoon. Allow the fruits to break down and release their juices, which should take about 15 minutes.
  3. Add the pectin to the pot and stir well to combine. Continue cooking the jam for another 20-30 minutes, or until it has thickened to your liking. Remember, the jam will continue to thicken as it cools.
  4. Once the jam is cooked, remove the pot from the heat and let it cool for a few minutes.
  5. Carefully ladle the jam into sterilized jars, leaving about 1/4-inch headspace. Wipe the rims clean, place the lids on, and screw on the rings until just finger-tight.
  6. Let the jars cool completely before storing them in the refrigerator for up to 3 months. The jam can also be canned for longer storage.
