Peach and Blueberry Jam

- 1/4 cup, freshly squeezed Lemon juice
- 3 cups Sugar
- 2 cups, fresh or frozen Blueberries
- 4 cups, peeled and diced Peaches

Instructions
- In a large, heavy-bottomed pot, combine the diced peaches, blueberries, sugar, and fresh lemon juice. The lemon juice not only adds flavor but also helps to extract the natural pectin from the fruits.
- Cook the mixture over medium heat, stirring occasionally with a wooden spoon. Allow the fruits to break down and release their juices, which should take about 15 minutes.
- Add the pectin to the pot and stir well to combine. Continue cooking the jam for another 20-30 minutes, or until it has thickened to your liking. Remember, the jam will continue to thicken as it cools.
- Once the jam is cooked, remove the pot from the heat and let it cool for a few minutes.
- Carefully ladle the jam into sterilized jars, leaving about 1/4-inch headspace. Wipe the rims clean, place the lids on, and screw on the rings until just finger-tight.
- Let the jars cool completely before storing them in the refrigerator for up to 3 months. The jam can also be canned for longer storage.
