Servings: 8

Ingredients

  • Fresh peaches (4 cups, sliced)
  • Fresh mangoes (2 cups, diced)
  • Granulated sugar (3/4 cup, divided)
  • Lemon juice (2 tablespoons)
  • Cornstarch (2 tablespoons)
  • Ground cinnamon (1 teaspoon)
  • All-purpose flour (1 cup)
  • Baking powder (2 teaspoons)
  • Salt (1/4 teaspoon)
  • Unsalted butter (1/2 cup, cold and cubed)
  • Milk (1/2 cup)
  • Vanilla extract (1 teaspoon)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, gently combine the sliced peaches, diced mangoes, 1/2 cup of granulated sugar, lemon juice, cornstarch, and cinnamon. Mix well to ensure the fruit is evenly coated in the mixture.
  3. Transfer the fruit mixture to a greased 9x9-inch baking dish, spreading it out evenly.
  4. In a separate bowl, whisk together the flour, remaining 1/4 cup of granulated sugar, baking powder, and salt until well combined.
  5. Add the cold, cubed butter to the flour mixture. Using a pastry cutter or your fingers, cut the butter into the flour until the mixture resembles coarse crumbs.
  6. Pour in the milk and vanilla extract. Stir gently until just combined, being careful not to overmix.
  7. Drop spoonfuls of the cobbler dough evenly over the fruit mixture in the baking dish, covering as much of the fruit as possible.
  8. Bake in the preheated oven for 35-40 minutes, or until the cobbler crust is golden brown and the fruit is bubbling up around the edges.
  9. Once baked, remove from the oven and let cool for a few minutes before serving warm. For an extra treat, serve with a scoop of vanilla ice cream or a dollop of whipped cream.
