Instructions
- Preheat your oven to 375°F (190°C).
- In a large bowl, gently combine the sliced peaches, diced mangoes, 1/2 cup of granulated sugar, lemon juice, cornstarch, and cinnamon. Mix well to ensure the fruit is evenly coated in the mixture.
- Transfer the fruit mixture to a greased 9x9-inch baking dish, spreading it out evenly.
- In a separate bowl, whisk together the flour, remaining 1/4 cup of granulated sugar, baking powder, and salt until well combined.
- Add the cold, cubed butter to the flour mixture. Using a pastry cutter or your fingers, cut the butter into the flour until the mixture resembles coarse crumbs.
- Pour in the milk and vanilla extract. Stir gently until just combined, being careful not to overmix.
- Drop spoonfuls of the cobbler dough evenly over the fruit mixture in the baking dish, covering as much of the fruit as possible.
- Bake in the preheated oven for 35-40 minutes, or until the cobbler crust is golden brown and the fruit is bubbling up around the edges.
- Once baked, remove from the oven and let cool for a few minutes before serving warm. For an extra treat, serve with a scoop of vanilla ice cream or a dollop of whipped cream.
