Instructions
- In a medium-sized saucepan, combine the diced peaches, diced mangoes, granulated sugar, freshly squeezed lemon juice, pure vanilla extract, and cinnamon.
- Place the saucepan over medium heat. Stir the mixture occasionally to prevent sticking and to ensure that the sugar dissolves evenly.
- Allow the mixture to cook for about 10-15 minutes, or until the fruits are soft and the sugar has turned into a slightly thick syrup. This is your compote.
- Once cooked, remove the saucepan from the heat. Allow the compote to cool down to room temperature.
- Serve this delightful Peach and Mango Compote either chilled or at room temperature. It's versatile enough to be enjoyed on its own, or as an appetizing topping for yogurt, ice cream, or pancakes.
Tips
- For a unique twist, you could add a touch of fresh mint or basil to the compote.
- If you prefer a chunkier compote, cut the fruits into larger pieces. For a smoother consistency, cut them smaller or puree the compote after cooking.
