Original recipe serves 4

Fresh mint leaves
a handful for garnish
Granola
1 cup
Honey
4 tablespoons
Greek yogurt
2 cups
Ripe mango
1, peeled and diced
Ripe peaches
2, pitted and diced

Instructions

  1. Begin by preparing your fruit. Peel and dice the ripe mango and peaches. Place them in a bowl and set aside.
  2. In a separate bowl, combine the Greek yogurt and honey. Stir until they are well mixed.
  3. Start assembling the parfaits by layering a spoonful of the peach and mango mixture at the bottom of your serving glasses or bowls.
  4. Add a layer of the yogurt and honey mixture over the fruit.
  5. Continue these layers until all of the ingredients have been used, ensuring you finish with a layer of the yogurt mixture on top.
  6. Sprinkle a layer of granola over the top of each parfait.
  7. Garnish with a few fresh mint leaves for a pop of color and freshness.
  8. Serve immediately for the best taste and texture.
