Peach and Nectarine French Toast

Awaken your senses with this indulgent Peach and Nectarine French Toast, a delightful morning treat that brings together the luscious sweetness of fresh peaches and nectarines, the warmth of cinnamon, and the creaminess of a perfectly cooked egg batter. This delicious dish is perfect for lazy weekend mornings or special celebrations, elevating the classic French toast to new heights with the vibrant flavors of summer fruits. Historically, French toast, known as 'Pan Dulcis' in ancient Rome, was created to prevent waste by using stale bread. Today, we embrace this tradition while celebrating seasonal fruits that make every bite a joyful experience.

Servings: 4

Ingredients

  • Eggs (4 large)
  • Milk (1 cup)
  • Vanilla extract (1 teaspoon)
  • Ground cinnamon (1 teaspoon)
  • Thick-cut bread slices (brioche or challah) (6 slices)
  • Fresh peaches (2, pitted and sliced)
  • Fresh nectarines (2, pitted and sliced)
  • Butter or cooking spray (for greasing)
  • Maple syrup (for drizzling)
  • Powdered sugar (for dusting)

Instructions

  1. In a shallow bowl, whisk together the eggs, milk, vanilla extract, and ground cinnamon until well combined.
  2. Dip each slice of thick-cut bread into the egg mixture, allowing it to soak for about 10 seconds on each side. Ensure it's well-coated but not overly soggy.
  3. Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or cooking spray.
  4. Place the soaked bread slices onto the skillet and cook for 2-3 minutes per side, or until golden brown and cooked through. Keep the cooked French toast warm on a plate.
  5. In the same skillet, add the sliced peaches and nectarines. Cook for 2-3 minutes, stirring gently, until the fruit is slightly softened and fragrant.
  6. To serve, stack the French toast on plates and top generously with the sautéed peaches and nectarines.
  7. Drizzle with maple syrup and dust with powdered sugar for an extra touch of sweetness before serving.
