Peach and Nectarine Jam

Ingredients
- Peaches
- 4 cups, diced (about 4-5 medium peaches)
- Nectarines
- 2 cups, diced (about 3-4 medium nectarines)
- Sugar
- 5 cups
- Lemon juice
- 1/4 cup (freshly squeezed)
- Pectin
- 1 package (approximately 1.75 oz)
Instructions
- In a large pot, combine the diced peaches, diced nectarines, sugar, and lemon juice. Stir well to combine the ingredients.
- Cook over medium heat, stirring occasionally, for about 15 minutes or until the fruits soften and the sugar has completely dissolved.
- Once the mixture is bubbling, add the pectin and stir vigorously. Continue to cook for another 30 minutes, stirring frequently, until the jam thickens and reaches your desired consistency.
- Remove the pot from heat and let the jam cool for about 5 minutes, allowing it to settle.
- Carefully transfer the hot jam into sterilized jars, leaving about 1/4 inch of headspace at the top. Seal the jars tightly.
- Allow the jam to cool completely at room temperature before storing it in the refrigerator. It can be stored for up to a year in a cool, dark place if properly sealed.
