Peach and Plum Crisp
Indulge in the flavors of summer with this delightful Peach and Plum Crisp, a dessert that brings together the sweetness of ripe peaches and the tartness of juicy plums. Topped with a crunchy oat crumble infused with warm cinnamon, this dish is not only a treat for your taste buds but also a feast for the eyes. Perfect when served warm with a scoop of vanilla ice cream or a dollop of whipped cream, this crisp is a nostalgic reminder of summer picnics and family gatherings. Historically, crisps date back to the 19th century, where they were created as a way to use up surplus fruit during harvest time, allowing families to enjoy seasonal produce long after the season ended.
Servings: 8
Ingredients
- Unsalted butter (1/2 cup, cold and cubed)
- Salt (1/4 teaspoon)
- Ground cinnamon (1 teaspoon)
- Rolled oats (1 cup)
- Brown sugar (1/2 cup, packed)
- All-purpose flour (1/2 cup)
- Lemon juice (1 tablespoon)
- Granulated sugar (1/4 cup)
- Plums (4, pitted and sliced)
- Peaches (4, pitted and sliced)
Instructions
- Preheat the oven to 375°F (190°C).
- In a large bowl, combine the sliced peaches, sliced plums, granulated sugar, and lemon juice. Toss to coat the fruit evenly and allow to sit for about 10 minutes to let the juices develop.
- In a separate bowl, mix together the all-purpose flour, brown sugar, rolled oats, ground cinnamon, and salt until well combined.
- Add the cold cubed butter to the flour mixture. Use your fingers or a pastry cutter to cut the butter into the dry ingredients until the mixture resembles coarse crumbs, ensuring there are no large chunks of butter left.
- Transfer the fruit mixture to a baking dish (approximately 8x8 inches) and spread it out evenly.
- Sprinkle the oat crumble mixture generously over the fruit, covering it completely for a delightful crunch.
- Bake in the preheated oven for 35-40 minutes, or until the fruit is bubbling and the topping is golden brown and crisp.
- Remove from the oven and let it cool for about 10 minutes before serving to allow the juices to thicken slightly.
- Serve warm with a scoop of vanilla ice cream or a dollop of whipped cream for an extra indulgent treat.
