Indulge in a delightful morning treat with this Peach and Plum French Toast. Made with fresh, juicy peaches and plums, this dish is perfectly balanced with a hint of cinnamon and creamy vanilla. Imagine sinking your teeth into a slice of golden-brown bread, soaked in a rich egg mixture, topped with warm, caramelized fruits, and finished with a drizzle of maple syrup. This recipe not only celebrates the sweet flavors of summer but also pays homage to the classic French toast, which has been enjoyed for centuries as a way to repurpose stale bread into a gourmet breakfast.

Servings: 4

Ingredients

Bread slices
8 slices (preferably thick-cut, like brioche or challah)
Eggs
4 large
Milk
1 cup (whole or 2% for creaminess)
Vanilla extract
1 teaspoon
Cinnamon
1 teaspoon
Fresh peaches
2, pitted and sliced
Fresh plums
2, pitted and sliced
Maple syrup
to taste, for drizzling
Powdered sugar
for dusting
Butter or cooking spray
for greasing the skillet

Instructions

  1. In a shallow bowl, whisk together the eggs, milk, vanilla extract, and cinnamon until well combined.
  2. Dip each slice of bread into the egg mixture, allowing it to soak for 15-30 seconds on each side to absorb the flavors.
  3. Preheat a non-stick skillet or griddle over medium heat and lightly grease it with butter or cooking spray.
  4. Place the soaked bread slices onto the skillet and cook for 2-3 minutes on each side, or until golden brown and crispy.
  5. Remove the cooked French toast from the skillet and keep warm.
  6. In the same skillet, add the sliced peaches and plums. Cook for 2-3 minutes, stirring gently, until the fruits are slightly softened and fragrant.
  7. To serve, stack the French toast on plates and top with the warm, caramelized peaches and plums.
  8. Drizzle generously with maple syrup and dust with powdered sugar before serving.
