Instructions
- Preheat the oven to 375°F (190°C).
- In a large bowl, combine the sliced peaches, raspberries, 1/2 cup of granulated sugar, cornstarch, and lemon juice. Toss until the fruit is well coated. Transfer the fruit mixture to a 9x9-inch baking dish.
- In a separate bowl, whisk together the all-purpose flour, 2 tablespoons of granulated sugar, baking powder, and salt.
- Add the cold, cubed unsalted butter to the flour mixture. Use a pastry cutter or your fingers to cut the butter into the dry ingredients until the mixture resembles coarse crumbs.
- Pour the milk and vanilla extract into the flour and butter mixture. Stir until just combined to form the cobbler dough, taking care not to overmix.
- Drop spoonfuls of the cobbler dough evenly over the fruit mixture in the baking dish.
- Bake for 35-40 minutes, or until the cobbler topping is golden brown and the fruit is bubbling.
- Remove the cobbler from the oven and let it cool for a few minutes before serving.
- Serve this delightful cobbler warm, perhaps with a scoop of vanilla ice cream or a dollop of whipped cream for an extra indulgent treat.
Tips
- For a gluten-free version, use a 1:1 gluten-free flour blend in place of all-purpose flour.
- You can use frozen peaches and raspberries when fresh ones are not in season. Just make sure to thaw and drain them well before using.
