Instructions
- Preheat the oven to 375°F (190°C).
- In a large bowl, combine the sliced peaches and 3/4 cup of granulated sugar. Stir well to coat the peaches evenly. Let them sit for about 15 minutes to release their juices.
- In a separate bowl, whisk together 1 cup of all-purpose flour, 1 tablespoon of baking powder, 1/4 teaspoon of salt, and 1 teaspoon of ground cinnamon.
- Add the melted butter, milk, and vanilla extract to the dry ingredients. Stir until just combined, being careful not to overmix.
- Pour the peach mixture into a 9x13-inch baking dish, spreading it out evenly. Ensure the peach juices are evenly distributed.
- Drop spoonfuls of the batter over the peaches, covering as much of the surface as possible. It’s okay if some peach slices peek through.
- Sprinkle additional ground cinnamon over the batter for extra flavor.
- Bake for 35-40 minutes, or until the topping is golden brown and the peaches are bubbling around the edges.
- Remove from the oven and let it cool for a few minutes before serving. This dish is best enjoyed warm.
- Serve with a scoop of vanilla ice cream for a delightful contrast of temperatures and textures.
Tips
- For a more complex flavor, consider adding a splash of bourbon or rum to the peach mixture.
- Use a mix of yellow and white peaches for added depth in flavor.
- If you prefer a crunchier topping, you can add chopped nuts like pecans or walnuts to the batter.
