Milk
1 cup
Vanilla extract
1 teaspoon
Ground cinnamon
1 teaspoon
Bread slices
8 thick slices (preferably brioche or challah)
Unsalted butter
2 tablespoons, divided
Fresh peaches
2 large, pitted and sliced
Maple syrup
1/4 cup
Powdered sugar
for dusting

Instructions

  1. In a shallow bowl, whisk together the eggs, milk, vanilla extract, and ground cinnamon until well combined.
  2. Dip each slice of bread into the egg mixture, ensuring both sides are soaked without becoming too soggy. Allow excess mixture to drip off.
  3. Heat a large skillet or griddle over medium heat and melt 1 tablespoon of unsalted butter.
  4. Place the soaked bread slices onto the skillet and cook until golden brown, about 2-3 minutes per side. Cook in batches if necessary, adding more butter as needed.
  5. Once cooked, remove the French toast from the skillet and set aside on a plate.
  6. In the same skillet, melt the remaining tablespoon of butter and add the sliced peaches. Cook the peaches for 2-3 minutes until they soften and caramelize slightly.
  7. To serve, stack the French toast on plates, top generously with the warm peach slices, and drizzle with maple syrup.
  8. Finish with a light dusting of powdered sugar for that extra touch of sweetness.
