Homemade Peach Preserve

This Homemade Peach Preserve is a delightful, southern-style recipe that captures the essence of summer in a jar. Each spoonful of this luscious preserve is bursting with the sweet and tangy flavor of fresh succulent peaches, with a hint of tartness from the lemon juice. It's the perfect addition to toast, a glaze for meats, or a filling for pastries.

Serves 24

Ingredients

Fresh ripe peaches
4 cups, peeled, pitted and chopped
Granulated sugar
3 cups
Fresh lemon juice
1/4 cup
Fruit pectin
1 package (1.75 ounces)

Instructions

  1. In a large, heavy-bottomed pot, combine the chopped peaches, sugar, and lemon juice. Mix well so that the peaches are coated with sugar and lemon juice.
  2. Let the mixture sit for about 10 minutes to allow the sugar to dissolve and the flavors to meld together.
  3. Place the pot over medium-high heat and bring the mixture to a boil, stirring occasionally to prevent the sugar from scorching at the bottom of the pot.
  4. Once the mixture starts boiling, stir in the fruit pectin. Continue to boil for 1 minute, stirring constantly to ensure the pectin is fully dissolved.
  5. Remove the pot from the heat and let the jam cool for about 5 minutes. This will help thicken the jam.
  6. Ladle the jam into sterilized jars, leaving a 1/4-inch headspace at the top. This allows for proper sealing.
  7. Wipe the rims of the jars with a clean, damp cloth and seal with lids.
  8. Process the jars in a boiling water bath for 10 minutes to sanitize and seal the jars.
  9. Remove the jars from the water bath using a jar lifter and let them cool completely on a towel or rack before storing in a cool, dark place.
  10. Your homemade peach preserve can be stored for up to 1 year. Enjoy it with your breakfast toast or as a glaze for your favorite meats!

Tips

  • 💡 For a smoother preserve, you can use a hand blender or immersion blender to puree the mixture before adding the pectin.
  • 💡 Try adding a teaspoon of vanilla extract or a pinch of cinnamon for a unique flavor twist.
  • 💡 Make sure to use ripe but firm peaches for the best flavor and texture.
  • 💡 Always use fresh lemon juice as it helps in setting the jam and balancing the sweetness.
