Ingredients
- Ripe peaches
- 2, pitted and sliced
- Plain yogurt
- 1 cup
- Honey
- 2 tablespoons (adjust to taste)
- Ice cubes
- 1 cup
- Fresh mint leaves
- a handful, plus extra for garnish
- Water
- optional, for thinning
Instructions
- Start by cleaning the ripe peaches and removing their pits. Slice them into small chunks.
- In a blender, combine the sliced peaches, plain yogurt, honey, and ice cubes.
- Blend the mixture until it becomes smooth and creamy. If you find the lassi is too thick for your liking, feel free to add a little water or more yogurt to adjust the consistency.
- Taste the lassi and adjust the sweetness if necessary by adding more honey, then blend again until well combined.
- Pour the lassi into chilled serving glasses. For an extra refreshing element, you can chill the lassi in the refrigerator for about 30 minutes before serving.
- Just before serving, garnish each glass with a few fresh mint leaves to enhance the presentation and add a lovely aroma.
- Serve immediately and enjoy this delightful summer refreshment!
Tips
- For a twist, try adding a pinch of cardamom or a squeeze of lime juice for additional flavor complexity.
- If you prefer a vegan version, substitute regular yogurt with coconut or almond yogurt.
