Made with succulent, ripe peaches, a drizzle of honey, and a splash of lemon juice, these popsicles are not just refreshing but also a healthier alternative to store-bought ones. Packed with natural sweetness and a zesty twist, they are sure to become a favorite for adults and kids alike. Peach popsicles have been a classic summer treat since the early 20th century, when Frank Epperson, the inventor of popsicles, first experimented with different fruit flavors.

Servings: 8

Ingredients

  • Water (1/2 cup)
  • Honey (1/4 cup)
  • Lemon juice (1 tablespoon)
  • Ripe peaches (4 medium size)

Instructions

  1. Start by peeling and removing the pit from the peaches. Then, cut them into small chunks.
  2. In a blender or food processor, combine the peach chunks, lemon juice, honey, and water.
  3. Blend the mixture until it's smooth and well combined. For a more rustic texture, you can blend it less to leave small peach chunks.
  4. Pour the blended mixture into popsicle molds, leaving a little space at the top for the popsicles to expand as they freeze.
  5. Carefully place the popsicle sticks into the molds.
  6. Freeze the molds for at least 4 hours, or until the popsicles are completely frozen.
  7. To remove the popsicles from the molds, run them under warm water for a few seconds. Then, gently pull on the sticks to release them.
  8. Serve these refreshing peach popsicles immediately and enjoy the taste of summer!
