Instructions
- Preheat the oven to 375°F (190°C).
- In a medium bowl, whisk together the all-purpose flour, baking soda, and salt until well mixed.
- In a large bowl, using an electric mixer, cream together the softened butter, creamy peanut butter, granulated sugar, and brown sugar until the mixture turns light and fluffy.
- To this butter mixture, add the egg and vanilla extract. Mix until the ingredients are well combined.
- Gradually add the dry ingredients to the butter mixture, mixing it until it is just combined to form the dough.
- Shape the dough into 1-inch balls. Take each ball and roll it in the additional granulated sugar to give a nice coat.
- Place the sugar-coated dough balls onto an ungreased baking sheet, keeping a space of about 2 inches apart.
- Bake for 8-10 minutes, or until the edges of the cookies turn lightly golden.
- Immediately after removing the cookies from the oven, press a Hershey's Kiss into the center of each cookie while they're still warm.
- Let the cookies cool on the baking sheet for about 5 minutes, then transfer them to a wire rack to cool completely.
Tips
- For a festive touch during the holidays, try using colored granulated sugar for rolling the dough balls.
- If you prefer a bit of crunch, use crunchy peanut butter instead of creamy.
