All-purpose flour
1 cup
Baking powder
2 teaspoons
Salt
1/4 teaspoon
White sugar
1 tablespoon
Milk
1 cup
Egg
1
Peanut Butter
1/4 cup
Vegetable oil
2 tablespoons
Maple syrup
as needed for serving
Chopped peanuts
for garnishing

Instructions

  1. In a large bowl, whisk together the flour, baking powder, salt, and sugar until well combined.
  2. In a separate bowl, whisk together the milk, egg, peanut butter, and vegetable oil until smooth.
  3. Gradually pour the wet ingredients into the dry ingredients, stirring gently. Be careful not to overmix; it's okay if the batter is a bit lumpy as this will result in fluffier pancakes.
  4. Heat a non-stick skillet or griddle over medium heat. Lightly grease it with cooking spray or a small amount of oil.
  5. Pour 1/4 cup of batter onto the skillet for each pancake, allowing enough space for them to spread.
  6. Cook until bubbles form on the surface of the pancake, then flip it over and cook for another 1-2 minutes, or until golden brown.
  7. Repeat the process with the remaining batter, adding more oil to the skillet if needed.
  8. Serve the pancakes warm, drizzled with maple syrup and garnished with chopped peanuts for a delightful crunch. Enjoy!
