Servings: 4
Ingredients
- All-purpose flour
- 1 cup
- Baking powder
- 2 teaspoons
- Salt
- 1/4 teaspoon
- White sugar
- 1 tablespoon
- Milk
- 1 cup
- Egg
- 1
- Peanut Butter
- 1/4 cup
- Vegetable oil
- 2 tablespoons
- Maple syrup
- as needed for serving
- Chopped peanuts
- for garnishing
Instructions
- In a large bowl, whisk together the flour, baking powder, salt, and sugar until well combined.
- In a separate bowl, whisk together the milk, egg, peanut butter, and vegetable oil until smooth.
- Gradually pour the wet ingredients into the dry ingredients, stirring gently. Be careful not to overmix; it's okay if the batter is a bit lumpy as this will result in fluffier pancakes.
- Heat a non-stick skillet or griddle over medium heat. Lightly grease it with cooking spray or a small amount of oil.
- Pour 1/4 cup of batter onto the skillet for each pancake, allowing enough space for them to spread.
- Cook until bubbles form on the surface of the pancake, then flip it over and cook for another 1-2 minutes, or until golden brown.
- Repeat the process with the remaining batter, adding more oil to the skillet if needed.
- Serve the pancakes warm, drizzled with maple syrup and garnished with chopped peanuts for a delightful crunch. Enjoy!
