Ingredients

Pearl onions
1 pound, peeled and trimmed
Olive oil
2 tablespoons
Balsamic vinegar
1 tablespoon
Honey
1 tablespoon
Fresh thyme
1 teaspoon, chopped (plus extra for garnish)
Salt
1/2 teaspoon
Black pepper
1/4 teaspoon

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Peel the pearl onions and trim the ends. If the onions are stubborn, blanching them in boiling water for 30 seconds can make peeling easier.
  3. In a large mixing bowl, whisk together the olive oil, balsamic vinegar, honey, chopped fresh thyme, salt, and black pepper until well combined.
  4. Add the peeled pearl onions to the bowl and toss until they are thoroughly coated with the marinade.
  5. Spread the onions in a single layer on a baking sheet lined with parchment paper for easy cleanup.
  6. Roast in the preheated oven for 25-30 minutes, stirring halfway through, until the onions are caramelized and tender.
  7. Remove from the oven and let cool slightly before transferring to a serving platter. Garnish with additional fresh thyme if desired.
