Ingredients

Chicken thighs
4, bone-in and skin-on
Potatoes
4 medium, peeled and cut into quarters
Red bell peppers
2, sliced
Onions
2, sliced
Garlic
4 cloves, minced
Olive oil
1/4 cup
Fresh rosemary
2 tablespoons, chopped (or 1 tablespoon dried)
Salt
to taste
Black pepper
to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, season the chicken thighs generously with salt and pepper.
  3. In a large baking dish, arrange the seasoned chicken thighs, quartered potatoes, sliced onions, and red bell peppers.
  4. Add the minced garlic and drizzle the olive oil over all the ingredients. Toss gently to coat everything evenly.
  5. Sprinkle the chopped rosemary over the top, ensuring the herbs are evenly distributed.
  6. Cover the baking dish tightly with a bell-shaped lid or aluminum foil to trap the moisture and flavors.
