- Chicken thighs
- 4, bone-in and skin-on
- Potatoes
- 4 medium, peeled and cut into quarters
- Red bell peppers

- 1/4 cup
- Fresh rosemary
- 2 tablespoons, chopped (or 1 tablespoon dried)

Instructions
- Preheat the oven to 375°F (190°C).
- In a large bowl, season the chicken thighs generously with salt and pepper.
- In a large baking dish, arrange the seasoned chicken thighs, quartered potatoes, sliced onions, and red bell peppers.
- Add the minced garlic and drizzle the olive oil over all the ingredients. Toss gently to coat everything evenly.
- Sprinkle the chopped rosemary over the top, ensuring the herbs are evenly distributed.
