Chicken thighs
4, bone-in and skin-on
Potatoes
4 medium, peeled and cut into quarters
Red bell peppers

2 tablespoons, chopped (or 1 tablespoon dried)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, season the chicken thighs generously with salt and pepper.
  3. In a large baking dish, arrange the seasoned chicken thighs, quartered potatoes, sliced onions, and red bell peppers.
  4. Add the minced garlic and drizzle the olive oil over all the ingredients. Toss gently to coat everything evenly.
