Pelmeni
Pelmeni are delightful Russian dumplings, often referred to as 'little ears' due to their shape, embodying the heart and soul of Eastern European cuisine. These tender pockets are traditionally filled with a savory blend of ground beef and pork, harmonized with aromatic spices and fresh herbs. Ingredients
- All-purpose flour
- 3 cups, plus extra for dusting
- Warm water
- 1 cup
- Egg
- 1, beaten
- Ground beef
- 1/2 pound
- Ground pork
- 1/2 pound
- Onion
- 1 medium, finely chopped
- Garlic
- 2 cloves, minced
- Salt
- 1 teaspoon
- Black pepper
- 1/2 teaspoon
- Sour cream
- 1 cup, for serving
- Fresh dill
- 1/4 cup, chopped, for garnish
Instructions
- In a large mixing bowl, combine the flour, warm water, and beaten egg. Stir until a shaggy dough forms.
- Knead the dough on a floured surface for about 5-10 minutes until smooth and elastic. Cover with a damp cloth and let it rest for 30 minutes.
- In a separate bowl, prepare the filling by mixing together the ground beef, ground pork, chopped onion, minced garlic, salt, and black pepper until well combined.
- After the dough has rested, roll it out on a floured surface until it is about 1/8 inch thick. Use a round cookie cutter or a glass to cut out circles of dough (approximately 3 inches in diameter).
- Place a small spoonful of the meat mixture in the center of each dough circle. Fold the circle in half and pinch the edges tightly to seal, ensuring no air pockets remain.
- Bring a large pot of salted water to a boil. Carefully add the pelmeni to the boiling water and cook for about 8-10 minutes, or until they float to the surface and are cooked through.
- Using a slotted spoon, transfer the cooked pelmeni to a serving dish.
- Serve hot, topped with sour cream and garnished with chopped fresh dill. Enjoy!
