1/4 cup

Goat cheese
4 ounces, crumbled
Bell peppers
2 cups, sliced (mix of red, yellow, and green)

Instructions

  2. In a large oven-safe skillet, heat the olive oil over medium heat. Make sure to coat the bottom of the skillet evenly.
  3. Add the sliced bell peppers to the skillet and sauté for about 5 minutes, or until they have softened and their vibrant colors have intensified.
  4. In a mixing bowl, whisk together the eggs, milk, salt, and freshly ground black pepper until the mixture is well combined and slightly frothy.
  5. Pour the egg mixture evenly over the sautéed bell peppers in the skillet, ensuring that the peppers are evenly distributed.
