Pepper Salad

This refreshing pepper salad is made with colorful bell peppers, tomatoes, cucumbers, and a tangy vinaigrette dressing.

Ingredients

  • Salt and pepper (to taste)
  • Honey (1 teaspoon)
  • Dijon mustard (1 teaspoon)
  • Lemon juice (2 tablespoons)
  • Olive oil (2 tablespoons)
  • Fresh parsley (1/4 cup, chopped)
  • Red onion (1/4 cup, thinly sliced)
  • Cucumber (1, diced)
  • Tomatoes (2, diced)
  • Green bell pepper (1, thinly sliced)
  • Yellow bell pepper (1, thinly sliced)
  • Red bell pepper (1, thinly sliced)

Instructions

  1. In a large bowl, combine the sliced bell peppers, diced tomatoes, diced cucumber, sliced red onion, and chopped parsley.
  2. In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, honey, salt, and pepper to make the vinaigrette dressing.
  3. Pour the dressing over the pepper salad and toss to coat evenly.
  4. Refrigerate for at least 30 minutes to allow the flavors to meld together.
  5. Serve chilled and enjoy!
