Ingredients
- Salt and pepper (to taste)
- Honey (1 teaspoon)
- Dijon mustard (1 teaspoon)
- Lemon juice (2 tablespoons)
- Olive oil (2 tablespoons)
- Fresh parsley (1/4 cup, chopped)
- Red onion (1/4 cup, thinly sliced)
- Cucumber (1, diced)
- Tomatoes (2, diced)
- Green bell pepper (1, thinly sliced)
- Yellow bell pepper (1, thinly sliced)
- Red bell pepper (1, thinly sliced)
Instructions
- In a large bowl, combine the sliced bell peppers, diced tomatoes, diced cucumber, sliced red onion, and chopped parsley.
- In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, honey, salt, and pepper to make the vinaigrette dressing.
- Pour the dressing over the pepper salad and toss to coat evenly.
