Granulated sugar
2 cups
Light corn syrup
1/2 cup
Water
1/2 cup
Peppermint extract
1 teaspoon
Red food coloring
1-2 drops (adjust for desired color)
Powdered sugar
for dusting

Instructions

  1. In a heavy-bottomed saucepan, combine the granulated sugar, corn syrup, and water. Heat over medium heat, stirring constantly until the sugar has completely dissolved.
  2. Once the sugar has dissolved, increase the heat to high and bring the mixture to a boil without stirring. Use a candy thermometer to monitor the temperature, and boil until the mixture reaches 300°F (hard crack stage).
  3. Remove the saucepan from the heat and carefully stir in the peppermint extract and red food coloring. Be cautious as the mixture may bubble vigorously.
  4. Quickly pour the hot mixture onto a silicone baking mat or a greased baking sheet. Allow it to cool for a few minutes until it is cool enough to handle but still pliable.
  5. With lightly greased hands, shape the warm candy into a pig shape. You can create small details such as ears and a snout for added charm. Let the shaped candy cool completely at room temperature.
  6. Once cooled, dust the Peppermint Pig with powdered sugar to prevent sticking and enhance its festive appearance before serving.
