Lemon
1, juiced and zested
Garlic
3 cloves, minced
Olive oil
3 tablespoons
Potatoes
4 medium, thinly sliced
White fish fillets
4 (6-ounce) fillets (such as cod, halibut, or tilapia)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a baking dish, arrange the sliced potatoes in a single layer. Drizzle with 1 tablespoon of olive oil and season generously with salt and pepper. Toss to coat the potatoes evenly.
  3. Bake the potatoes for 15 minutes, or until they begin to soften.
  4. While the potatoes are baking, season the fish fillets with salt, pepper, and minced garlic, ensuring they are well-coated.
  5. Remove the baking dish from the oven and place the seasoned fish fillets on top of the partially cooked potatoes.
  6. Drizzle the fish and potatoes with the remaining 2 tablespoons of olive oil and the juice and zest of the lemon.
  7. Return the dish to the oven and bake for an additional 20-25 minutes, or until the fish is opaque and flakes easily with a fork, and the potatoes are golden brown.
  8. Before serving, sprinkle with fresh parsley for a burst of color and flavor. Enjoy your Pesce al Forno Con Patate with a side salad or crusty bread.
