Ingredients
- Fresh basil leaves
- 2 cups, packed
- Pine nuts
- 1/3 cup
- Garlic cloves
- 2, peeled
- Parmesan cheese
- 1/2 cup, grated
- Extra virgin olive oil
- 1/2 cup
- Salt
- 1/2 teaspoon, or to taste
- Black pepper
- 1/4 teaspoon, or to taste
Instructions
- In a food processor or blender, combine the packed fresh basil leaves, pine nuts, peeled garlic cloves, grated Parmesan cheese, salt, and black pepper.
- Pulse the ingredients until they are finely chopped, scraping down the sides of the bowl as necessary.
- With the processor running, slowly drizzle in the extra virgin olive oil. Continue blending until the mixture is smooth and well combined. If needed, adjust the seasoning by adding more salt or pepper to taste.
- Transfer the pesto to a clean jar or airtight container and refrigerate until ready to use. It can be stored for up to a week in the fridge.
- Serve the pesto alla Genovese with freshly cooked pasta, as a spread on crusty bread, or as a sauce for grilled meats, fish, or roasted vegetables.
