Ingredients

  • Olive oil (2 tablespoons)
  • Salt (1/2 teaspoon)
  • Black pepper (1/4 teaspoon)
  • Fresh basil leaves (8 to 10)
  • Fresh mozzarella cheese (4 slices)
  • Tomato (1, sliced)
  • Ciabatta bread (4 slices)
  • Pesto sauce (4 tablespoons)
  • Chicken breast (2, boneless and skinless)

Instructions

  1. Preheat the grill or a grill pan over medium-high heat. Brush a little olive oil on the grill to prevent the chicken from sticking.
  2. Season both sides of the chicken breasts evenly with salt and pepper.
  3. Grill the chicken for about 6-8 minutes per side, or until the internal temperature reaches 165°F. Remove from the grill and let it rest.
  4. While the chicken is resting, brush the sliced ciabatta bread with olive oil and lightly toast it on the grill for about 2 minutes on each side, or until it's beautifully golden and crispy.
  5. Spread 1 tablespoon of pesto sauce on one side of each toasted ciabatta slice.
  6. Assemble the sandwich: Place a grilled chicken breast on top of the pesto sauce on one slice of bread. Layer with tomato slices, fresh mozzarella cheese, and basil leaves. Cover with the other slice of bread, pesto side facing down.
  7. Press the sandwich together gently. If desired, you can grill the whole sandwich for a minute or two to melt the cheese.
  8. Slice the sandwich in half diagonally and serve warm.
