This delectable breakfast dish brings together crispy golden potatoes and fluffy scrambled eggs, all enveloped in a rich homemade pesto sauce. Finished with a sprinkling of grated Parmesan cheese, it's a hearty and flavorful way to greet the morning.

Ingredients

Parmesan cheese
1/2 cup, grated
Salt and pepper
to taste
Fresh basil leaves
2 cups
Garlic
2 cloves
Pine nuts
1/4 cup
Olive oil
1/2 cup, plus 2 tablespoons for frying
Eggs
6, beaten
Yellow Onion
1, diced
Potatoes
2 medium, diced

Instructions

  1. To make the pesto, combine basil leaves, garlic cloves, pine nuts, and 1/2 cup olive oil in a food processor. Blend until smooth. Set aside.
  2. Heat the remaining 2 tablespoons of olive oil in a large skillet over medium heat.
  3. Add the potatoes to the skillet and cook until crispy and golden, about 10 minutes.
  4. Add the diced onion and cook until it becomes translucent, about 5 minutes.
  5. Pour the beaten eggs over the potato and onion mixture. Cook, stirring occasionally, until the eggs are set, about 5 minutes.
  6. Stir in the homemade pesto and season the scramble with salt and pepper to taste.
  7. Sprinkle the scramble with the grated Parmesan cheese just before serving. Enjoy your Tuscan breakfast!
