Tuscan Pesto Potato Scramble

Ingredients
- 1/2 cup, grated Parmesan cheese

- 2 cups Fresh basil leaves
- 2 cloves Garlic
- 1/4 cup Pine nuts
- 1/2 cup, plus 2 tablespoons for frying Olive oil
- 6, beaten Eggs
- 1, diced Yellow Onion
- 2 medium, diced Potatoes

Instructions
- To make the pesto, combine basil leaves, garlic cloves, pine nuts, and 1/2 cup olive oil in a food processor. Blend until smooth. Set aside.
- Heat the remaining 2 tablespoons of olive oil in a large skillet over medium heat.
- Add the potatoes to the skillet and cook until crispy and golden, about 10 minutes.
- Add the diced onion and cook until it becomes translucent, about 5 minutes.
- Pour the beaten eggs over the potato and onion mixture. Cook, stirring occasionally, until the eggs are set, about 5 minutes.
- Stir in the homemade pesto and season the scramble with salt and pepper to taste.
- Sprinkle the scramble with the grated Parmesan cheese just before serving. Enjoy your Tuscan breakfast!
