Ingredients
- Green mangoes
- 2 large, peeled and julienned
- Tomatoes
- 2 medium, diced
- Red onion
- 1 small, thinly sliced
- Shrimp paste (bagoong)
- 2 tablespoons
- Vinegar (preferably cane vinegar)
- 3 tablespoons
- Sugar
- 1 teaspoon
- Salt
- 1/4 teaspoon
- Pepper
- 1/4 teaspoon
- Chili flakes (optional)
- 1/2 teaspoon
Instructions
- In a large bowl, combine the julienned green mangoes, diced tomatoes, and thinly sliced red onion. Toss gently to mix the ingredients.
- In a separate small bowl, whisk together the shrimp paste, vinegar, sugar, salt, and pepper until well combined. If you like a bit of heat, add the chili flakes.
- Pour the dressing over the salad and toss well to coat all the ingredients evenly.
- Serve the salad immediately, or refrigerate for an hour to allow the flavors to meld together. This salad is best enjoyed chilled.
